Choose the right glass: each wine has it’s own glass. Fill the glass for 1/3 and let the space to float the wine.
White and rosy wines are served in glasses with long glass stalk because in this way the hand doesn’t heat the wine.
On the contrary a round glass with a short stalk make the wine come hot.
After the use wash the glass with neutral soap and put it overturned.
Red wine is served at “cellar temperature” (15-16°) whilst white wine is served cold (10-12°).
The most precious red wines must be open and let decant into a warm jug in order to let the wine breath.
As a result the aroma is exalted.

The 5 senses:

Appear: look at the colour of the wine before tasting it/ move the wine on the glass and observe the way it goes on the glass.
Smell: the smell (called bouquet) can be more or less intense and smell even of fruit and flowers.
Taste: Savour the wine sipping it very slowly, keeping it in your mouth before swallow.
After the first sample drink it thinking about the taste remaining on the mouth (aftertaste) , quality index.
